Howbeit [there is] not in every man that knowledge: for some with conscience of the idol unto this hour eat [it] as a thing offered unto an idol; and their conscience being weak is defiled.

Note 11 at 1Co 8:7: The knowledge that Paul said some people are lacking is the knowledge "that an idol is nothing in the world" (1Co 8:4).

Note 12 at 1Co 8:7: Since God looks on the heart (1Sa 16:7), people's consciences are more important than their actions. This is why some could be forgiven of terrible acts (such as Paul), because they were done ignorantly in unbelief with clear consciences (1Ti 1:13, see note 1 at Ac 23:1). Yet others (such as Ananias and Sapphira, Ac 5:1-10) were judged harshly. They had premeditated their actions and had rejected the conviction of their consciences. It is vital that we keep our consciences sensitive to the Lord.
