Howbeit [there is] not in every man that knowledge: for some with conscience of the idol unto this hour eat [it] as a thing offered unto an idol; and their conscience being weak is defiled.

Note 11 at 1 Cor. 8:7: The knowledge that Paul is referring to as being lacking in some people is the knowledge "that an idol is nothing in the world" (v. 4).

Note 12 at 1 Cor. 8:7: Since God looks on the heart (1 Sam. 16:7), the conscience of a person is more important than his actions. This is why some could be forgiven of terrible acts (such as Paul), because they were done ignorantly in unbelief with a clear conscience (1 Tim. 1:13; see note 1 at Acts 23:1, p. 709). Yet, others (such as Ananias and Sapphira-Acts 5:1-10) were judged harshly. They had premeditated their actions and had rejected the conviction of their conscience. It is vital that we keep our conscience sensitive to the Lord (see ref. n at this verse).
